Ceviche

Anyone can create this great fresh fish dish.

STEP 1

 

Start with any very fresh or flash frozen white fish.

STEP 2
Chop fish while it’s still a little frozen (easier to cut) into small thin pieces. Cutting the fish thinly helps it “cook” quicker.
STEP 3

Other ingredients: dice a whole red pepper into very small pieces, along with 2 scallions and a handful of cilantro.

STEP 4

Combine all the vegetables and fish into a bowl and cover with lime juice! Then simply refrigerate for about 2 hours and eat – the lime juice will actually “cook” the fish.

STEP 5

Serve over lettuce and season to taste. It will tastes so fresh and light!
