The Friday after New Years gave us an opportunity to create something truly creative and really yummy.
We first combined black rice with scallions, an egg and a little flour so we can create small rice pancakes.
Onto the skillet, the rice pancakes are cooked so that they have a nice crust on each side. Once cooked these little pancakes are cooled.
Next to go on the skillet are the scallops. Brown each side but remember to take off the heat before they cook through. Super balls NOT wanted!
Time to combine all the ingredients – yes that is caviar!
Start at the bottom with a rice pancake; place scallop, then top with crème fraichè and a little caviar.
